The KOLB REACH-IN RETARDER PROOFER gives bakers full control over fermentation, letting them delay or accelerate dough proving with programs preset up to 24 hours ahead. With two independent proofing chambers, dough can be ready exactly when needed, adding valuable flexibility to production scheduling.

An upgraded steam system maintains a precise temperature and humidity balance while reducing scale build-up for greater durability and reliability. Imported dual-outlet fans distribute heat and moisture evenly, and a PCB control panel with automatic and manual modes delivers accurate, repeatable results.

Built for open-kitchen bakeries, the proofer combines high-quality PU insulation for energy efficiency with a robust stainless steel interior and exterior. Anti-fog door frames and glass windows keep contents clearly visible, while a total capacity of 32 trays (600x400mm) across two decks suits steady daily output.
